Basic pesto recipe (FULL&SKINNY)

I already mentioned that in my budget challenge I used pesto from a jar. Nothing is wrong with that of course and it tastes really good as well. But When you make it yourself it is just a little more tasty don't you think? Plus it is so easy to make pesto yourself, all you need is a good foodprocessor or blender and that's it (plus the right ingredients of course). This is the recipe of a basic pesto but I also started to experiment with some more healthy less fatty versions of this goodness. 

 

Let's start with the basic recipe and if you guys want to have different pesto's I will be glad to share the recipes here! When I make pesto, I try to make a big jar because I just love to use it for loads of things. Add some more avocado or olive oil and you have a great salad dressing (for your caprese or green salad!) Spread it on your sandwich, put a spoon of pesto in your soup or just use it as a pasta sauce! Endless possibilities with this green goodness.

I wish I could say that these basil leaves come from my own garden, but unfortunately I have to disappoint you as I did not take such good care of my basil plants. I promise I will in the future.... However, I can say that these ones are at least organic. Below I will share with you the normal (full fat) version of this delicious good and the skinny version. 

 

For the skinny version I just left out the pine nuts and replaced them with a bit of walnuts plus I reduced the amount of olive oil a bit. I have to say, they both taste very good! So yay for the skinny version!

Prep time: 5 minutes, Cook time: 5 minutes, Total time: 10 minutes

Serves: 1 jar (420ML)

 

FULL PESTO SAUCE INGREDIENTS: 

 

- 6 cups fresh basil leaves 

- 6 garlic cloves 

- 3/4 cup pine nuts 

- 1 1/3 cup olive oil 

- 1 1/2 cup parmesan cheese 

- Fresh pepper and a pinch of salt to taste 

 

PREP: 

 

1. Toast the pinenuts in a pan for about 2-3 minutes

2. Place all ingredients in the foodprocessor and process until smooth

3. Store in an air tight container or jar in the fridge or freezer 

 

 

SKINNY PESTO SAUCE INGREDIENTS: 

 

Serves: 2 persons (4 tbsp) 

 

- 1 cup basil 

- 1 garlic clove 

- 3 tbsp olive oil 

- 1/4 cup grated parmesan cheese 

- 4 walnuts 

- Pepper and a pinch of salt to taste 

 

PREP:

 

1. Toast the walnuts in a pan for about 2-3 minutes 

2. Place all ingredients in the foodprocessor and process until smooth

3. Store in an air tight container or jar in the fridge or freezer
